Coto Makassar

 Bahan:

  • 500 gr daging sapi (campur dengan jeroan sesuai selera)

  • 2 liter air cucian beras (air beras kedua)

  • 3 batang serai, memarkan

  • 3 lembar daun salam

  • 5 lembar daun jeruk

  • 100 gr kacang tanah, sangrai, haluskan

Bumbu halus:

  • 8 siung bawang merah

  • 6 siung bawang putih

  • 4 butir kemiri, sangrai

  • 1 sdm ketumbar sangrai

  • 1 sdt jintan sangrai

  • 1 ruas jahe

  • 1 ruas lengkuas

Cara membuat:

  1. Rebus daging dan jeroan dengan air beras hingga empuk, angkat lalu potong-potong.

  2. Tumis bumbu halus bersama serai, salam, dan daun jeruk hingga harum.

  3. Masukkan tumisan ke dalam rebusan daging, tambahkan kacang tanah halus, aduk rata.

  4. Masak hingga kuah kental, sajikan dengan ketupat dan sambal tauco.
